Beyond biryani, her repertoire includes traditional Dhakaiya bakarkhani, haleem during Ramadan, and a shahi mutton rezala that regulars order weeks in advance. For Amina, cooking is not a business — it is how she keeps her grandmother's legacy alive in a rapidly changing Dhaka.
